Crockpot Taco Soup is a savory tomato-based soup

Even if you're not a soup lover, this recipe is definitely for you, especially if you are
into Mexican food.
This festive soup is best served topped with shredded cheese, Fritos, and sour cream.
You can also add fresh diced onion, jalapeños or any other toppings that you think would complement your soup.
We used a blend of regular diced tomatoes and Rotel tomatoes in this recipe to give the base a little spice without overdoing it.

I first had this recipe at a potluck at work. My boss was bringing this soup as her dish and couldn't stop raving about how delicious it was.
So, of course, a foodie like me couldn't wait to try it. It was love at first bite and I've been making this recipe ever since.
Life gets busy and we don't always have time to watch over food on the stove between taking care of other things while trying to prepare dinner right?
So even though the crockpot has not always been my favorite kitchen gadget, I decided to give it a go.
The thing about the crockpot is food just tastes a little different cooked in it, so I am particular about recipes that I make it in and adjustments are usually required.
Needless to say, it was a success, and anything that is a time saver and food that doesn't have to be constantly watched over is always a win.
Now, the ground beef still needs to be fully cooked before adding it to the crockpot, but that is the only portion of this recipe that needs preparation on the stove.
All you have to do is dump all of the ingredients into the crockpot, stir them together and let the crockpot do the rest of the work. Of course, you will have to check on it periodically and stir it occasionally though.
Ingredients needed to make the soup:
Ground Beef
Diced tomatoes
Rotel Tomatoes
Ranch Style Beans Corn (sweet)
Salad Dressing Mix Seasoning
Taco Seasoning
Fritos (optional)
Sour cream (optional)
Shredded Cheese (optional)
Steps to make the soup:
Add the entire contents of the tomatoes, beans, and corn. All of the juices add to the flavor of this soup recipe. Cook the soup on high for two to two and a half hours.
Don't skip the salad dressing mix. It is one of the key ingredients to this recipe. And don't worry, your dish won't taste like ranch.
I cook with this seasoning all the time and I do not like ranch. So trust me when I say it's good!
To prepare this recipe on the stove, follow the same steps above and then cook the soup covered for about 30 minutes on low to medium heat.

Ingredients
- 1 ½ lbs ground beef
- 28 oz (can) diced tomatoes
- 2 10 oz (can) Rotel - original
- 1 15 oz (can) sweet whole kernel corn
- 1 15 oz (can) ranch-style beans
- 1 oz taco seasoning mix
- 1 oz salad dressing and recipe mix
- Shredded cheese, sour cream, and Fritos (optional)
Instructions
- In a skillet, cook beef until fully brown.
- Remove beef from heat and drain any excess oil.
- Add beef to crockpot along with diced tomatoes, Rotel, corn, ranch-style beans, taco seasoning, and salad dressing mix.
- Stir ingredients together.
- Cook on high for 2- 2 ½ hours stirring periodically.
- Serve and enjoy!
- Top with shredded cheese, sour cream, and Fritos (optional)
