Ingredients needed to make the potatoes:
- Russet potatoes
- Vegetable oil
- Onion powder
- Cajun seasoning
- Black pepper
Steps to make the skillet potatoes:
Wash, peel, and slice the potatoes into ⅛-inch rounds. Heat a skillet over medium-high heat. A cast iron skillet is great for cooking these potatoes.
Add the oil and heat. Once the oil has heated, add the potatoes evenly and toss coating the potatoes.
Mix the seasoning together and sprinkle over the potatoes. Toss the potatoes together to spread the seasoning over all the potatoes.
While the potatoes are cooking, slice the onions then add them to the pan tossing and then spreading evenly.
Cover and continue to cook, tossing periodically, for about 10- 15 more minutes or until golden brown and tender. Remove from the heat and serve.

Nope! If you aren't going to cook the potatoes right after peeling them, they can be placed in water to prevent them from turning brown.
Just make sure to pour off the water prior to cooking the potatoes. They will become tender during the cooking process.
