There is something special about homemade pancakes.
My grandmother used to make homemade pancakes in a cast-iron skillet.
They were the best pancakes ever! I think what also made the pancakes so good is that she always added vanilla extract, made them in a cast-iron skillet, and used Crisco (vegetable shortening) to cook the pancakes in.
I mean real Crisco, not the liquid oil. The pancakes would have slightly crispy edges and would be soft and just right in the middle.
These pancakes were not fried in a cast-iron skillet. I used a dutch oven ceramic skillet. Same great taste so no worries, just use your favorite skillet!
Buttermilk Pancakes Tips:
I did not use Crisco, but I did fry them in a little vegetable oil. That's what I had on hand so that's what I used.
You don't need more than a tablespoon or two of oil depending on how large your skillet is and how many pancakes you are cooking at a time. Gage it accordingly.

Just FYI, for that homestyle taste, cooking spray won't get it. You want to use actual vegetable oil or shortening.
Completely your choice, but don't say I didn't warn you if you decide to use cooking spray lol.
