Have you ever had a Rum and Cherry Coke Popsicle? Or a popsicle made with alcohol? If you haven’t you’re definitely missing out!
From the looks of it, adult popsicles have become a “thing” now. They have been so popular that I figured that it was non-negotiable to create a recipe for you all.
I’m sure you all know by now that I’m a strong believer in having a few cocktails and letting your hair down lol.
Although summer is almost over, it’s still super hot (at least it is in Texas), so that means it’s still popsicle season.
There is still time to enjoy the long days, relax and have some fun! It is usually warm here until early October!
This recipe is slightly different from your typical rum and coke cocktail.
Usually when you think of rum and coke, you picture brown liquor, but these popsicles were made with Bacardi Superior Rum, which is a clear liquor. Different rum, but still a great taste.
There are also three other ingredients:
- Cherry Coca-Cola
- Regular Coca-Cola
- Cherry Snow Cone Syrup
Steps to make this recipe:
All you have to do is mix the ingredients together in a bowl and pour them into your popsicle molds. Freeze them for at least 4-5 hours before serving them.
However, they are best frozen overnight. I used Koji popsicles molds. I found them at Target along with the snow cone syrup.
The syrup is not just for snow cones, it can be used for any kind of frozen dessert. The popsicle molds that I used are also available at Amazon.
I love the fact that you can just wash the mold and reuse it!

- 2 c of cherry coca-cola
- 1/2 c of regular coca-cola
- 3/4 c of Bacardi rum
- 2/3 c of koji wild cherry snow cone syrup
- In a bowl, add cherry coke, regular coke, rum and snow cone syrup.
- Mix well and pour into popsicle molds.
- Freeze until solid (appromimately 2-3 hours).
