New Year's Black Eyed Peas recipe

  • First, add your turkey neck(s) to a medium-sized pot.
  • Fill the pot almost to the top with water ensuring that the turkey neck is fully covered with water.
  • Cook over medium heat for approximately one hour.
  • After one hour, in a separate large pan, add olive oil and heat to medium heat.
  • Then add the onions and saute until they start to brown.
  • Once the onions begin to brown, add the minced garlic to the pan.
  • Next, add the peas to the pan and then the smoked turkey neck.
  • Pour the water from the smoked turkey neck into your pan.
  • Season the peas with the onion powder and cajun seasoning mixing together. 
  • Cover and cook over medium heat for 45 minutes to an hour. (If needed, add additional water throughout the cooking process.)
  • Remove from the heat and serve!
