Ingredients needed for the recipe:
- Diced potatoes: Russet potatoes were used for this recipe.
- Ground pork sausage: One pound of sausage is needed.
- Eggs: 6 large, whole eggs.
- Diced red and green bell pepper: ½ c of each is needed.
- Diced yellow onion: ½ c of onion is needed.
- Sharp shredded cheese: 1 c of cheese was used for this recipe.
- Olive oil: About a half a cup is needed to fry the potatoes and the vegetables.
- Seasonings: ½ teaspoon of seasoned salt and garlic salt.
Steps to make the recipe:
First, peel and dice your potatoes and rinse them with cold water. If you are not going to cook them right away cover them with cool water.
When you're ready to cook the potatoes, drain the water and heat about a ½ c of olive oil in a large pan or skillet.
Fry the potatoes for approximately 20 minutes or until they become tender on the inside and slightly crispy on the outside.
Stir occasionally to ensure the potatoes do not burn and cook evenly. Adjust the heat as needed to ensure that the potatoes do not brown too fast.
Once the potatoes are fully cooked, remove them from the pan and sit them to the side. Add your sausage to the pan, and cook until brown.
Once the sausage is cooked, remove it from the pan and drain the excess oil.
Add oil to the pan if needed to saute' the vegetables. Saute' the vegetables until they soften then remove them from the pan and sit them to the side.
Add the eggs and milk to the pan and scramble. Once the eggs are cooked, add the potatoes, sausage, peppers, and onions back into the pot/pan.
Stir in the cheese and then this dish is ready to serve.
This dish is so filling and can be stored in the refrigerator in an airtight container for up to three days.

- 1 pound ground pork sausage

- 1 c sharp shredded cheese
- ½ c green bell pepper -diced
- ½ c red bell pepper - diced
- ½ c yellow onion - diced

- ½ teaspoon seasoned salt
- ½ c olive oil
Instructions
- Peel and dice potatoes into cubes.
- Rinse the potatoes and place them in cold water.
- Heat a skillet on medium heat and coat the bottom of the pan with olive oil- about ½ c.
- Drain the water from the potatoes and add them to the pan.
- Stir the potatoes and toss them in the olive oil.
- Stir the seasoned salt and garlic salt into the potatoes.
- Stir occasionally to ensure the potatoes do not burn and cook evenly. Adjust the heat as needed to ensure that the potatoes do not brown too fast.
- Cook for 20-30 minutes or until the potatoes are tender on the inside and slightly crispy on the outside.
- Once the potatoes are fully cooked, remove them from the pan and sit them to the side.
- Add the sausage to the pan and cook until brown.
- Once the sausage is cooked, remove it from the pan and drain the excess oil.
- Saute' the vegetables until they soften then remove them from the pan and sit them to the side. (Add oil to the pan if needed to saute' the vegetables.)
- Add the eggs and milk to the pan and scramble.
- Once the eggs are cooked, add the potatoes, sausage, peppers, and onions back into the pan/skillet and stir together.
- Stir in the cheese, serve and enjoy!

How much milk are you supposed to use? No where in the recipe does it tell you how much. I just scrambled my eggs without it. It would be helpful to have listed it.
