Sausage, Egg and Cheese Egg Bake is a breakfast casserole made with
ground pork, onion, bell pepper, eggs and cheddar cheese.

I'm always looking for methods to make my life easier during the week. I still work a 9-5 and blog in between so the less that I have to do during the week the better.
Making this Egg Bake saves me so much time in the morning, for at least three days.
The casserole can also be prepared the day before baking. If preparing it the night before, cover it with foil or store it in an airtight container, then place the casserole in the refrigerator until you're ready to bake it. It's that easy!
This is also a very popular recipe that people enjoy making on Christmas morning. It's a great way to feed a crowd of people without having to be in the kitchen all morning. Just add toast, fried potatoes, french toast or pancakes for a complete meal.
So lets get into it so I can show you how it's done!

Ingredients needed for the Egg Bake:
- Ground sausage
- Whole eggs
- Whole milk
- Yellow onion
- Green bell pepper
- Sharp shredded cheddar cheese
- Salt
- Black pepper

Steps to make the Egg Bake:
Pre-heat your oven to 350 degrees and grease/spray a 3 qt. baking dish.
In a large skillet, brown the sausage. Add the onions and bell pepper prior to the sausage completely browning.
Once the sausage is brown and the onion and bell peppers are tender, drain any excess oil from the pan. Sit it to the side.
In a large bowl, add the eggs and whisk together. Add the milk, cheese, salt, and pepper to the bowl and mix together.

Add the cooked sausage mixture and mix. Pour the ingredients into the baking dish. (You can also add the ingredients as shown above). Cover with foil and bake for 45 minutes.
Remove the casserole from the oven, and allow it to cool a few minutes prior to cutting. Then serve and enjoy!
Tips for the Breakfast Casserole:
Sometimes the casserole can be a little greasy for a person's liking. That's completely normal.
You can simply blot the top of the casserole with a paper towel to remove the excess oil. Make sure to do this when you remove the casserole from the oven.
Okay, so I know what you're thinking... No potatoes or bread were added to the Egg Bake...am I right? Well, I don't really fancy the extra starch in my Egg Bake so I've never added it when I've made it.
There is never an issue with the ingredients binding together without the addition of starch, so there is no need to add it if you don't want to.
Frequently Asked Questions:
I recommend refrigerating the casserole no longer than 24 hours before baking it.
The casserole should be covered with foil prior to placing it in the oven to bake.
Ham, turkey, bacon chorizo, diced potatoes, hashbrowns, chopped bread and/or tomatoes are also other ingredients that are great for this recipe. Adjust the amount of your ingredients accordingly.
I recommend refrigerating the casserole in an airtight container for no longer than three days.

To get the fluffier egg bake, you suggested adding more eggs and milk-how many more eggs and how much more milk would you suggest?

Hello Sandra! I would suggest adding no more than 1/4 - 1/2 cup of extra milk. And if you add more eggs, I would suggest adding about two more eggs.
